L\u2019id\u00e9e qui a pr\u00e9sid\u00e9 \u00e0 la naissance de ce projet de Fondation est celle qui anime Paul Bocuse :\u00a0\u00ab Nous sommes des manuels, notre m\u00e9tier s\u2019apprend, c\u2019est un m\u00e9tier de compagnonnage que nous avons le devoir de transmettre \u00bb. Pour Paul Bocuse et ses proches, il est en effet indispensable de p\u00e9renniser les traditions culinaires, de maintenir les codes et les valeurs de la profession, de transmettre l&rsquo;exigence de la\u00a0qualit\u00e9 des gestes et des savoir-faire pour\u00a0que demain les prochaines g\u00e9n\u00e9rations profitent des acquis et connaissances\u00a0des anciens et qu&rsquo;\u00e0 leur tour, elles poursuivent cette mission.  La Fondation Paul Bocuse souhaite d\u00e9velopper des relations suivies \u00e0 la fois avec les professionnels du monde de l\u2019H\u00f4tellerie et de la Restauration ainsi qu&rsquo;aupr\u00e8s des jeunes en participant au d\u00e9veloppement et \u00e0 l\u2019avenir des m\u00e9tiers de l\u2019H\u00f4tellerie et de la Restauration, en\u00a0entretenant une coop\u00e9ration avec d\u2019autres fondations pour valoriser ces\u00a0m\u00e9tiers, en soutenant des\u00a0programmes d&rsquo;\u00e9changes et de stages professionnels et en permettant l\u2019acc\u00e8s \u00e0 la culture culinaire.  Du mois de janvier au mois d&rsquo;avril 2015, la Fondation Paul Bocuse a organis\u00e9 tous les mercredis apr\u00e8s-midi des ateliers d\u00e9couverte des m\u00e9tiers de bouche pour des jeunes coll\u00e9giens aubois. Sous la houlette de professionnels exp\u00e9riment\u00e9s au sein du CFA, les jeunes stagiaires se sont exerc\u00e9s aux m\u00e9tiers de la p\u00e2tisserie, de la boulangerie et de la cuisine.
